Valerie Kuhns has put together a beautiful cookbook with wonderful  photos of the recipes. They will make you hungry just looking at them. She has dedicated two pages to explaining gluten free and what is allowed and not allowed in a gluten free diet. There is much interesting info in her cookbook along with her delicious recipes.
